- 225g unsalted butter
- 200g dark brown sugar
- 100g caster sugar
- 2 eggs
- 2 tsp vanilla extract
- 320g plain flour
- 1 tsp baking soda
- 1 tsp fine salt
- 250g dark chocolate, chopped
- Flaky sea salt, to finish
Method

Brown the butter in a pan until it smells nutty and flecks turn amber, then cool for 10 minutes.

Whisk the browned butter with both sugars, then beat in the eggs and vanilla until glossy.

Fold in the flour, baking soda, and salt, followed by the chopped chocolate.

Chill the dough for at least 1 hour so the flavor deepens and the cookies bake up thick.

Scoop onto lined trays and bake at 180C for 11 to 12 minutes until the edges set but centers stay soft.

Finish with flaky salt and let them firm up on the tray for 5 minutes.
